Over the last 20 or more years the Adelaide Hills has developed a reputation as one of the best regions to grow Pinot Noir and Chardonnay for sparkling wine. The region’s high altitude, ample water and low vigour soils lends itself towards the production of high quality wines with finesse and sophistication.

Our Non-Vintage Firebird Chardonnay and Pinot Noir based sparkling wine was sourced from our family owned Tunnel Hill and Woodlands Ridge vineyards located in the Adelaide Hills. The latest release is a blend of wine from the 2016 (Pinot) and 2017 (Chardonnay) vintages with both producing low yields and moderate vine vigour which meant that little had to be done to improve grape quality during the year.
The grapes were harvested early in the cool of the morning and quickly transported to the winery. From there the grapes were gently pressed to preserve the freshness of the fruit. The result is an elegant and refreshing sparkling wine displaying green apple, pear, and strawberry aromas with a hint of baker’s dough. The palate has a soft and creamy textured feel with sweet brioche flavours, balanced acidity and a creamy mousse bead. Time on yeast lees, both in barrel and tank, added texture and complexity to the sparkling wine.
Winemaking responsibilities rest with Mark Kozned with all our wines being made at our Revenir winery located in the Adelaide Hills. The current wine is a blend of 2016 and 2017 wines selected from wines aged in older French oak barrels as well as fresh wines fermented in tank to retain primary fruit characters.
