The concept of the Super Tuscan originates in Italy and is a rebellion by Young Turk wine makers in the 70’s and 80’s who did not want to be constrained by the rigorous and restrictive DOC appellation control system and structure that restricts the use of other country varieties such as Bordeaux varieties and, under the Chianti DOC, requiring the use of some white grapes. Why did we choose to make a Super Tuscan wine- because I love the style of wine and like the idea of using varieties such as Cabernet Sauvignon (8%) and Merlot (2%) adding weight and character to the Sangiovese wine.

Why is this wine special – We only produce it when the vintage reaches a premium quality? Otherwise the Sangiovese is off to make Rose. The 2017 vintage was a beautiful growing season with a warm start, then a period of cool temperatures and rain encouraging balanced shoot development and vine growth. Yields were moderate to medium with small berry size but fantastic skin colour and seed hardness. The grapes were handpicked on the same day and then delivered to our winery in half tonne bins.
The grapes were put through the crusher/destemmer and the whole berries were then placed back in the picking bins – important as the berries were not broken by the must pump. The whole berries were then gently tipped into the fermemter to encourage carbonic maceration fermentation where ferment occurs within the inside of the. To further increase the intensity of the wine we Saignee around 10% of the juice further increasing the skin to flesh ratio. After pressing the wine spent about 8 months in a mix of New 500L (puncheon) format Italian Gamba oak and a mix of older French oak barrels
The wine has a medium colour reflecting the vintage and the addition of the Cabernet. It has fresh lifted aromas exhibiting red cherries, sweet plums and crushed violets, fennel and chalk dust. The wine has a long length with a good tannin structure. Its medium to full-bodied with a lovely savoury character with dried plum, red berries a hint of cassis with a hint of tobacco like spice and supple tannins to finish.
