The 2016 growing season was great for growing aromatic whites in the Adelaide Hills. Warm but not too hot days and relatively cool nights meant that delicate whites wines matured under perfect growing conditions. A burst of rain mid-February (over 30 mm) freshened up the canopy giving us a Rolls Royce engine to ripen the grapes. Following the rain, the season ended with a period of warm weather, but well-developed canopies balanced by slightly above average yields provided the perfect environment for the harvesting of a full flavoured Gruner Veltliner. We picked 2 batches of Gruner on 19 February 2016 with a combined Baume of 11.9 (Be) producing grapes with citrus, blood orange, spicy apples and white pepper with a hint of green tobacco plus beautiful chalky mineral acidity.
Winemaking responsibilities rest with Mark Kozned plus the crew at Revenir Winery with special focus from Chris Parsons.
We made the wine initially in stainless tanks focussing on a slow cool ferment where the ferment temperatures are managed between 12 and 18 degrees. We then transferred a small portion (20%) of the wine (at 8 Be) to seasoned French oaks barrels for maturation allowing for some lees contact to capture texture and mouthfeel. The 2016 wine has a vibrant and pristine nose with apples blossoms and white pepper evident. The palate displays green apple, blood orange (citrus notes) and subtle green tobacco characters with balanced natural, moderate sweetness and the finish is long and lingering.
